After Math test cheering choc cookies
So, today is Terrible-dreaded-and-feared-Math-test Day... Dénia's always so nervous on Math test Days!
Obviously a nice cuppa and delicious cookies will be a heartwarming necessity when she comes back home^^
This is definitely my favorite cookies recipe, simple and quick.
♥ 1 flax or chia egg
♥ 100g brown sugar
♥ 60g margarine
♥ 180g flour
♥ 1 tsp baking powder
♥ 1/2 tsp baking soda
♥ Vanilla extract
♥ 1 pinch of salt
♥ 100 g chocolate chips. We like to use good quality chocolate, that means one you enjoy eating on its own. For ths recipe I used Raspberry chocolate, semi sweet dark chocolate and white chocolate.
Right,let's get started!
Preaheat oven 180°C (350° F)
IIn a large bowl, or in your food processor, sift flour, baking soda and baking powder together and set aside..
In a separate bowl with a hand mixer or in the bowl of your electric mixer, beat the margarine and sugar until light and fluffy..
Add the flax/chia egg, beating well, then beat in the vanilla extract.
Finally add the flour mixture. and chocolate chips mixing until incorporated.
Use an ice cream scoop to form balls on a parchment paper lined cooking tray..
I like to refrigerate them for a while to avoid the dough from spreading..
Cook for about 14/16 minutes or until set around the edge but soft in the center.
Let them on the cooking tray for a few minutes then thransfer on a wire rack.
