Soft sugar cookies ---with an attempt of pretty icing---

INGREDIENTS:
1/2 cup (110g) margarine
3/4 cup ( 160G) sugar
1/4 apple sauce
1 tsp vanilla extract
2 & 3/4 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup (100g) soy cream

DIRECTIONS:
Mix together the margarine and sugar and beat until creamy.
Add in the apple sauce, the vanilla extract and the cream and mix until combined.
In a separate bowl mix together the flour, baking soda, baking powder and salt.
Slowly add dry ingredients to wet ingredients.
Mix until just combined.
Wrap the dough in plastic wrap and refrigerate for a couple of hours.
This is necessary as the dough is quite sticky.
Preheat oven to 180° C ( 350°F)
Once you remove your dough from the fridge you certainly will have to add another 1/4 1/2 cup flour to stop it from sticking. I needed to add plenty.
Roll it out on parchment paper.
Cut with floured cookie cutter
Bake for 8/10 minutes.
You can either eat them plain or add some nice and colored icing.
This is my first attempt of icing making and piping, so please I require indulgence...
I used 1 egg white, 250 g icing or confectionner sugar SIFTED and a few drops lemon juice.
Stir with a wooden spoon until creamy.
Do not beat as you don't want air pockets to form in the mixture.
Add whatever coloring you 'd like. I used red gel.
Decorate with flowers, hearts, balls, chocolate sprinkles, anything pretty will do
Wrap your biscuits in small bags with pretty washi tape to give your friends.
Store the remaining biscuits in an air tight jar for tomorrow tea....
