Banana-applesauce- bread on a "Raining Cats and dogs day"

 Right, it definitely is pouring cats and dogs!

I'm back from Ben's school where I have waited  for him while he was taking a most important International Management oral Mid term exam---fingers crossed--- toes crossed---every possible thingies crossed---

So, what shall I do  now? Baking seems a good idea, no? It's so relaxing^^

Ok, having plenty of apples and bananas...I think I'll try that  recipe I have wanted to test for a while:

a no butter/no oil banana bread. I used Sally's baking recipe.

Let's get started!

 What will you need?

- 1OO g unsweetened apple sauce, I used homemade, as Gosh, it's so easy to make!

- 75 g honey or Agave syrup

- 50 g brown sugar

- 2 teaspoons vanilla extract

- 60 ml milk

- 2 large eggs

- 3 medium ripe bananas

- 215 g wholemeal flour

- 1 teaspoon baking soda

- 1/2 teaspoon ground cinnamon

- 1/2 teaspoon salt

- 50 g chopped almonds or walnuts (optional)

Adjust the oven rack to the lower position and preheat to 180 ° C ( 350° F).

Spray your loaf with non stick spray.

In a medium bowl whisk the apple sauce,honey, brown sugar, vanilla and milk until combined.

Then whisk in the eggs and the mashed bananas intil combined.

In a large bowl whisk the flour, baking soda and almonds together.

Pour the wet ingredients into the dry ingredients and slowly whisk until 'just' combined.

Pour the batter into the prepared pan.

 And bake for 60/65 minutes....... you might have a very nosy cat in the meantime., wondering where the supposedly 'rained' dog is.......

After 30 minutes, your bread will have become quite brown

So just loosely cover it with aluminum foil to prevent the top from getting too brown.

The bread is done when a toothpick inserted in the center comes out clean.

Allow the bread to cool completely in the pan on a wire rack before slicing.

Et voilà!

At that point you might have another nosy worrying cat looking for the dogs as well.....
