Gluten free oatmeal choc cherries cookies
As some of you may know, we started baking gluten free last summer for our friend Fred.
Even if you're not gluten intolerant, honestly you want to try these as ,Oh my!
These are absolutely LUSH!
To make these delicious gluten free yummy cookies you will need:
** 1/2 cup ( 100 g) softened butter
** 1/2 cup ( 100g) brown sugar
** 1 egg
** 1 tsp vanilla extract
** 1 cup rolled oats ( we purshased gluten free ones)
** 1 cup 1/2 oat flour ( You can grind your own in your food processor)
** 1/2 tsp salt
** 1/2 tsp baking soda
** 1/2 cup ( 100g) dried cherries ( I dried canned cherries in a low temperature oven for about 2 hours since I couldn't find any dried cherries)
** 1/2 cup ( 100g) chocolate chunks. We don' like buying chocolate chips as we prefer a stronger chocolate with more flavour, but you can use them if you like, no problem^^
So, first you will combine the butter and sugar.
Then you will add the egg and the vanilla extract, and mix well.
In a separate bowl, combine the oat flour, oats, salt and baking soda.
Add to the wet ingredients, mixing well until just combined.
Stir in the cherries and chocolate chunks.
Place balls of dough on a cookie sheet and bake for about 10 minutes or until the edges are slighly golden brown.
And honestly they are so....délicieux!
