Super skinny sultanas cookies (non vegan)
Having eaten too many several yummy Easter treats, I decided to bake some super skinny cookies for Tea.
I used:
- 1 cup (70g) oat flour. I ground mine.
- 3/4 cup (180g) low fat yogurt
- 2 TBS (25g) egg whites
- 1/2 tsp vanilla paste or pure vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup (45g) Stevia (If using raspberries or bluberries, add 1/3 c Stevia as they are more sour than sultanas.
- 3/4 cup ( 80g) sultanas, or dried cranberries or any dried fruit. I leave that entirely up to you^^

- Preheat oven to 375°F ( 180°C)
- Separately combine wet ingredients and dry ingredients (except for the dried fruits)
- Mix dry ingredients into wet ingredients.
- Fold in the dried fruits of your choice.
- Drop tablespoons of batter onto baking sheet
- Bake for 8/10 minutes
