Peanut butter chickpeas cookies- very healthy^^
Having some of Mom's homemade peanut butter left and some leftover cooked chickpeas from lunch
I decided to use both.
Of course I read loads of recipes on the net, and one more time I made up mine.
Here's what I used. Not much as you can see:
- 1/3 cup (75g) peanut butter
- 1/2 cup & 2 TBsp (95g) cooked chickpeas. We cooked ours but canned chickpeas are ok.
- 1/2 tsp pure vanilla extract
- 3/4 tsp baking powder
- 2 TBsp honey or Agave. I used Honey.
- A pinch of salt.
- Preheat oven to 350°F ( 180°C)
- Mix all the ingredients together in your food processor or with your stand mixer, until the mixture is very smooth.
- Wet your hands ( sort of mandatory as your dough will be quite sticky) and form small balls about 2 cms ( 1/2 inch).
- Place the balls onto a baking sheet lined with parchment paper, about 2 inches apart.
- Flaten the balls with you hand
- Press a fork into the tops to make a crisscross pattern
- Bake for 10/12 minutes.
- Allow to cool on a wire rack
Aren't they lovely?
Chewy in the center and crispy on the edge!
